To begin with take raisins to soak them in half cup of water.
Now pour ghee in a pan, place it on the flame and add broken wheat.
Cook it on high flame until it changes colour to pinkish brown.
Pour hot water. Cook it on medium flame by covering the pan partly. Cook till water evaporates.
Check if the wheat has turned soft, else add more water to make it tender.
When the water evaporates completely, add ghee, sugar and half a cup of water. Stir well. Put a griddle (tawa) below the pan and cook for almost 10 minutes on low fire.
Once ghee begins seeping out of the pan, lapsi is prepared.
