Ghevar
(cake made from flour soaked in ghee and milk)
Ghevar is a flavourful sweet specialty. Jaipur, Rajasthan's capital, is famous for its ghevars. Tantalize your taste buds with this cake made from flour soaked in ghee and milk.
Ingredients :
- 3 cups plain flour
- 1 cup solidified ghee
- 1/2 cup milk
- 1 kg ghee for deep frying
- 4 cups water approximately
- 1/4 tsp yellow food colour
- 3-4 ice cubes

For Garnishing :
- 1 tsp powdered cardamom (elaichi)
- 1 tbsp chopped almonds or any other dry fruits
- ½ tsp saffron mixed with 1 tbsp milk
- Silver foil
Method :
- Make sugar syrup that is thinly consistent.
- Now take solidified ghee in a bowl. Rub it with ice cubes until it becomes white.
- Add flour, milk and a cup of water. Mix till the batter becomes smooth.
- Mix yellow food colour with water enough to dissolve it. Add this to the batter.
- Add water to make the batter fairly thin so much so that it runs off from the spoon.
- Take a steel container which is 5-6” in diameter and 12” in height. Fill half of it with ghee and heat it till it becomes smoky hot.
- Now pour 50 ml of batter in a continuing stream in the middle of ghee. As soon as the foam settles pour another glass of batter in the centre. Allow the foam to settle all over again. Once it does loosen the ghevar and carefully lift it to put it on a wire mesh allowing it to drain.
- Take a container that is flat bottomed to keep the hot syrup. Make sure that the ghevar fits in well while dipping it into the syrup. Now again place ghevar on mesh so that the extra syrup drains out. Now, spread some syrup on the top of ghevar.
- Cool it for some time.
- Garnish with silver foil, drops of saffron and chopped almonds. Sprinkling of cardamom powder adds flavour and colour. You can also choose to top it with rabri. Ghevar is ready to serve.
