Gatte Ki Sabji

Gatte ki sabji is a mouth-watering Rajasthani main course dish. It is a very popular and spicy curry recipe of Rajasthan.

Ingredients :

For Gatta :

  • 200 grams besan (bengal gram flour)
  • 1/2 tablespoon red chilli powder
  • 1/2 tablespoon haldi powder
  • oil
  • salt to taste

For Gravy :

  • 2 tablespoon ghee
  • 1 tablespoon red chilli powder
  • 1/2 tablespoon haldi (turmeric) powder
  • 1 small bowl curd
  • 1/2 tablespoon dhania-jeera powder
  • a pinch of heeng (asafoetida) powder
  • jeera
  • salt to taste and some chopped cilantro (dhania)

Method :

  1. Pour one litre water in a pan. Put it to boil on slow flame.
  2. Now take besan, 2 tablespoon oil, 1/2tablespoon red chilli powder, 1/2 tablespoon haldi powder and salt to taste.
  3. Mix all these ingredients well and till it becomes a solid dough.
  4. Now make small round pieces from this dough. Also make thin rolls about 5-6  inches long.
  5. Allow these pieces and rolls to boil for 5-6 minutes in the boiled water.
  6. After boiling these rolls, keep them aside for 2 minutes to ally them to cool.
  7. Keep the water initially boiled for gattas in a separate container.
  8. Cut the rolls into small pieces now.
  9. Pour ghee in a pan. A few seconds later, add jeera (cumin seeds) to it.
  10. Then add to it red chilli powder, haldi powder and a nip of heeng power. Add curd and heat for a minute or so.
  11. Next add gattas, dhania, jeera powder and water. Add salt to taste and cook for about 5 minutes.
  12. Gatte ki saji is ready. Sprinkle some chopped cilantro before serving with parathas.
